BONUS RECIPE: No-Bake Energy Balls (3 ways!)

Is your Snack Monster rearing? No reason to be afraid of it! Feed him-- it's the only way he'll go away! Remember, it's allllll about coming to your next meal calm. The more calm (aka not #hangry) you are, the better you can make decisions that serve you. So whip up a few of these balls on the weekend, to have whenever you're hankering for a snack between meals!

These are probably THE easiest energy ball you'll make. No food processor needed! Of course, if you want them with less texture- process away! But I like them just like this!

The base:

1 cup rolled oats

1 cup finely shredded coconut

1/2 cup ground flax

1/2 cup nut butter

1/3 cup liquid sweetener of choice

1/3-2/3 cup nuts or dried fruit

pinch sea salt

1 tsp vanilla extract (optional but recommended!)

Chocolate Peanut Butter

- use peanut butter for nut butter

- honey is our favorite sweetener

- add 1/3 cup mini chocolate chips

Cranberry Walnut Spice

- use almond butter for nut butter

- maple is our favorite sweetener

- add 1/3 cup dried cranberries + 1/3 cup walnuts

- add 1/4 tsp dried ginger + pinch dried nutmeg

Oatmeal Raisin

- use almond butter for nut butter

- maple is our favorite sweetener

- add 1/2 tsp cinnamon

- add 1/3 cup raisins

Bonus: I love swapping 1/2 the flax for hemp seeds!

For all:

Add all ingredients to a large bowl. Mix until well combined. Wet hands slightly and form into 1-2" balls (depending on how big you want 'em!). Place on a cookie sheet and let chill in fridge until firm, about 20-30 minutes. Enjoy!
