Kid-Friendly Recipe: Allergy-friendly Mac n' Brocc



What kiddo doesn't love some good macaroni and cheese? And as mamas, I think we all do our best to include as much nutrition as possible- which is why I included some of our simple healthy hacks by adding in some veggies along with the pasta-- and boosting the pasta, too! Not to mention the option for a super nutrient-dense dairy-free option with a delicious and spoon-licking-good cashew cheeze sauce (no icky soy cheeze, here!).

The Benefits of Bean Pasta:

You can, of course use any sort of pasta you'd like for this recipe, however we love to boost it just a little with the option of using a bean-based pasta for extra fiber and plant-based protein (then it makes it a little more of a complete meal). Our favorite brands include: Banza, Thrive Market Brand and POW!

Classic Cheesy Mac n' Brocc (with dairy, gluten-free modifications)

Ingredients:

Cheese sauce: 1/4 cup unsalted butter 1/4 cup all purpose flour (regular or gluten-free) 2-3 cups whole milk, warm 3/4 cup cheddar cheese, grated (white cheddar if you want it white) sea salt and pepper to taste

2 cups broccoli, chopped

1 box shell pasta (we love Banza chickpea pasta for some extra fiber + plant-based protein!)


Instructions:


FOR CHEESE SAUCE: 1. Melt butter at medium-low heat in a medium saucepan.


2. Add flour and whisk until well-combined.


3. Let cook for another minute, until flour starts to turn a light tan color (not brown!).


4. Add milk slowly, whisking constantly.


5. Continue to add milk (start with two cups and decide how thick you want it- you can

always add more, but you can't take away).


6. Stir in cheese until melted and desired consistency. Season to taste.


MAC N' BROCC

1. In a separate pot, steam or lightly boil broccoli florets for 3-4 minutes until fork-

tender but not falling apart.


2. Cook pasta according to package directions. Drain well (do not rinse).


3. Combine broccoli, pasta and cheese sauce and stir well to combine.

Dairy-free Cheezy Cashew Mac n' Brocc (dairy-free, gluten-free modifications)

Ingredients:


CASHEW CHEEZE SAUCE: 1 cup raw cashews, soaked for at least 2 hours and drained well 1/2 cup water (more as needed) 1 tbsp apple cider vinegar (to taste) 1/4 cup nutritional yeast 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp sea salt

2 cups broccoli, chopped

1 box shell pasta (we love Banza chickpea pasta for some extra fiber + plant-based protein!)

Instructions:


FOR CASHEW CHEEZE SAUCE: 1. Combine cashews and water in the bowl of a high-speed blender or food processor. 2. Blend until as smooth as can be. 3. Add other ingredients and blend well. You may add more water if you desire- I find

thicker is better to stick to the pasta well.

4. Taste for seasoning. Season and serve.
