Autumn is by far my favorite time of the year. The crisp fallen leaves under my feet as I go on my morning walks, to the food-- ahh, Autumn food. SO delicious (did you check out last month's curried butternut squash soup? One of our easy Autumn favorites!). This simple crustless breakfast bake is a delicious autumn-inspired breakfast staple in our house, with sweet roasted sweet potato, savory eggs and cheese and a bit of green for a little extra nutrient boost in there, as well. We eat this for breakfast, lunch and dinner! Enjoy!
