RECIPE: Easy Curry Chicken Salad

I've loved curried chicken salad since my first trip to Whole Foods back in high school. I was instantly in love and I've been making a version ever since- but I hadn't written down the steps until recently, because it's just so easy to throw together, it almost feels like second nature. I hope you'll feel the same about this simple and flavor packed lunch or dinner!

Easy Curried Chicken Salad

2/3 cup avocado oil mayo (sub greek yogurt if you'd like something less heavy) 1 tbsp curry powder 1 tbsp honey (or liquid sweetener of choice)

pinch sea salt 1/4 cup chopped celery 1/4 cup chopped almonds 1/4 cup dried currants 3 cups cooked and shredded chicken

1.Whisk together mayonnaise, curry powder, honey, and sea salt. 2.In a separate bowl, toss celery, almonds, currants and chicken. 3. Mix sauce with chicken mixture well. Keeps in fridge for 3-5 days.
