RECIPE: Make-ahead breakfast wraps (3 ways)



Breakfast you can eat with one hand? It's a must for a busy mama, or kids on the go. I'm a big fan of planning ahead to create more ease in your days- especially busy mornings, and these freezable wraps are an easy solution! Each recipe makes two wraps, double or triple as desired and freeze for a quick morning meal!


Make-ahead (freezer friendly) breakfast wraps, 3 ways

Base recipe:

2 pliable tortillas (I recommend spelt or almond flour, warmed lightly, if you don't want to use wheat) butter or oil 4 eggs, whisked pinch sea salt 1. Scramble eggs with a small amount of oil/butter- as you normally would, let cool slightly (unless you plan on eating immediately).

2. Place eggs in the center of wrap. Add any fillings on top as desired, placing veggies in the middle if using- cheese or meat over top.


3. Fold wrap, starting on the top and bottom, then folding in the sides. Wrap firmly in foil to freeze or keep fresh. To reheat: If frozen, for best results reheat for 10-12 minutes unwrapped in a toaster oven or regular oven (375F). Place in microwave for 15-20 seconds to finish heating middle if middle is still cold OR microwave unwrapped 40-60 minutes on a paper towel (will not be as crispy- still delicious!


Reheat from cold in the toaster oven for 5-6 minutes or in the microwave for about 30 seconds until heated through. (Microwave times will vary)


Mix it up three ways (or make your own favorite combo!


Spinach, Feta + Sundried Tomato Wrap 2 cups spinach 1 tsp ghee or oil 3 tbsp sundried tomatoes, soaked if firm, drained and sliced 1/4 cup feta cheese 1. Sautee spinach in a small amount of ghee or oil. Top eggs with spinach, sundried tomatoes and feta before wrapping up.

Pepper, onion + chicken sausage 1/3 cup chopped bell pepper 1/3 cup chopped onion

1 tsp ghee or oil 2 chicken sausages (I love doing sweet and savory with apple sausages) 1/3 cup shredded cheese (I love monterey jack or colby jack, here)


1. Sautee pepper and onion in a small amount of ghee or oil. Add in chicken sausage to brown. Top eggs with veggie/sausage mixture and cheese before folding. Classic Bacon + Cheddar 4 slices of bacon sliced or shredded sharp cheddar cheese


1. Cook bacon from cold until crispy. Pat oil off well. Top eggs with bacon and then cheese. Fold and enjoy!
