Recipe: Meal Prep Friendly Taco Meatloaf Muffins


Make these meal-prep friendly mini meatloves ahead for dinner or even quick lunches! I like serving them alongside some guacamole and fresh squeezed lime juice.




Taco Meatloaf Muffins

Makes 8-10 muffins

Ingredients:

avocado oil

1 small onion, diced small

1 small red bell pepper

2 cloves garlic, minced

1 lb ground beef

1/2 cup corn

1/4 cup chopped cilantro

1 egg

1/4 cup almond flour

Spice blend:

2 tsp chili powder

1 tsp cumin

1/2 tsp oregano

1/4 tsp coriander

1/4 tsp onion powder

1/2 tsp sea salt

or 1 tbsp taco seasoning


Instructions:

1. Preheat oven to 350.

2. Line a muffin tin with silicone liners or grease well.

3. In a small pan, heat a drizzle of oil to medium, Sautee pepper and onion until translucent. Let cool slightly. 

4. In a large bowl, mix sauteed pepper and onion, garlic, ground beef, corn, cilantro, egg, almond flour and spice blend.

5. Mix well with hands and divide between 10 muffin cups. 

6. Bake in oven for 20-25 minutes until cooked through.
